Having attended many of the food truck roundups around the Miami area, some of which host 45+ food trucks, I saw a great opportunity to bring some Boricua flavor to the table. Out of the 60+ food trucks in the Miami area only one served Puertorican food, but was stationed in Doral. We are mobile and go to various food truck roundups offering Tripletas, alcapurrias, empanadillas, and other “antojitos” from Puerto Rico.
